For those of you that would like to give it a try. Here is the recipe!
Salmon & Mussel Donburi
Ingredients
Serves 2
2 Salmon Fillets
12 Mussels
150g Basmati Rice (soaked and washed)
1/2 Red Pepper
1/2 Yellow Pepper
2 Spring Onions
2 cloves garlic
Chilli flakes to sprinkle
80g Tin of Sweetcorn
Dash of Soy Sauce
For the Broth
1 tsp Miso Paste
125ml Boiling Water
Dash of soy sauce
Chop the peppers, spring onion and garlic and place on a baking tray with the sweetcorn and the rice.
Sprinkle with the chilli flakes, ground pepper and soy sauce to taste.
Place the mussels on the top and the smoked salmon fillets to the side. Season the salmon with salt and pepper and more chilli flakes.
Place in the steam oven for 15-20 minutes until the mussels have opened and the fish is flaky.
If using in a fan oven, cover with tin foil and cook at 180deg for 15-20 minutes.
In the meantime make up the miso broth by mixing a tsp of miso paste into the boiling water and adding a dash of soy sauce.
Remove baking tray from the oven and serve into two large bowls and pour over the broth.
Yum!
